Recipe Marathon # 4th day - Aappam

4th day of Recipe Marathon by DK, Todays Special is Aappam. Aappam is a famous break fast variety of Chettinad. I learnt this Aappam from My mom in law. Atleast once in a week we will prepare this at home for break fast. Easy breakfast recipe here. Check it out.
 
Ingrediants
2 cup Raw rice
1 cup Par boiled rice
½ cup urad dhal
3 ½ tsp Rock salt
2tsp sugar
1cup Coconut extract ( Medium thick)
½ tsp Cooking soda
oil for frying

Instructions
Soak dhal and rice together for 5 hours or overnite
Grind to a smooth thick paste. Add salt in the end of grinding.
Ferment it. Extract coconut milk from one large coconut.
Pour it in the prepared batter and add sugar. Mix it well
Heat a deep curved pan (appam kadai) and wipe it with a cloth dipped in oil.
Pour a ladle full of batter in the center of the kadai . lift it and tilt it in circular motion. So that the appam is formed.

Center of the appam should be thicker
Close the kadai with a lid and cook it in medium flame
Appam is cooked only in one side
When the batter is cooked, remove the aappam carefully with the other side of the dosa laddle.

Serve it hot with, vadai curry, vattal appam (egg pudding), thengai paal, spicy gravy.
If eyes are not formed in the dosa add little more cooking soda. Keep aappam kadai specially for making aappam.

Delicious Appams. My friend in college used to bring appams this made this way. our method is slightly different.

Healthy Dish ,I too make aappams at home.Not this year though,I left my aapam tawa at home ,so can visually eat from yours.It looks delicious,Adding urad dal is new to me.
