Recipe Marathon#2- 8thday - Kara Bonda

8th day in recipe marathon by DK....Kara bonda is my favourite recipe and everyone will like it... shapes of the bonda r like this cos im not a perfect maker in these things.. i believe in this words...practice makes the shapes better....hehehe... i think taste only matters... so have todays special bonda for all of them ....
Ingredients

1 cup Raw rice
¼ cup Urad dhal
salt to taste
1 ½ tbsp soaked black channa
¼ cup Finely cut onions
5no green chilli
1 tsp pepper (crushed)
1 tbsp Finely cut coriander leaves
Instructions
Soak rice and dhal together in enough water. Grind it in to smooth paste with salt and allow to ferment till sour for 2 days.
Mix all the ingredinats together with batter.
Heat oil in a kadai. When the oil is heat enough drop spoonful in hot oil.
Fry till golden brown. Serve hot with chutney / sambar/ pickle.
This can be done with left over dosa batter also.

Friendship Award

Recipe Marathon#2 - 7th day- Spicy Chicken Fry

Today is the 7th day of Recipe Marathon by Dk...And today is a treat for chicken lovers... this is my own version of chicken fry whicj=h my family loves...here is the recipe for u all.....


Ingredients-1
15 Chicken pieces (cut in cubes)
1 no Lemon
Oil for deep frying
Ingredients-2
4 tsp Red chilli powder
2 tsp Jeera powder
1 tsp Aniseeds powder(sombu)
2 tsp Pepper powder
1tsp Corriander powder
Salt to taste
3 tsp Cornflour
2 tsp Ginger & garlic paste
1 pinch Red colour powder.
Instructions
Clean chicken pieces with turmeric powder.
Take a bowl add ingrediants 2 to lemon juice mix well if needed add little water. Add chicken pieces to mixture and marinate for about 2 hours.
Heat oil and Deep fry the marinated chicken pieces till they turn golden brown.
serve hot . if needed add lemon juice at the end.

Meme # 2

Now its me who starts the Meme now... I wil be tagging 4 of them in Recipe Marathon team Continue girls . The main idea now is to know about each other cos im new to ur group. :)

1. I live in Azerbaijan (baku) which is near caspian sea above iran and near turkey (hope u got it geographically) and I really miss my home town chennai....i love chennai and heat also :), i live with my husband ...i dont eat non veg....but i cook for my husband....I have two and half years old daughter (Hasna).
2. My only daughter is everything for me and she loves my cooking :) ...i cook new recipes for her....
3. I learnt classical dance and music......and now enjoy singing,dancing, cooking, chatting with my friends. trying out new recipes of my friends too...
4. Now im in Marathon and love to learn new things , trying to post things which i know.....
I love to eat pizzas...they r my favourite and love panner too..(basically i want to diet cos to lose weight ..hehehe)...(Nakka control panna mudiyala )
5. i love watching New Movies but now no chance im here so only T.V (satelite) :(
6. My hobbies now is cooking, learning more recipes thro blogging...and making new friends....
I love travelling also.... Want to see many places...Enjoy more....Hoping for the Best.

Home made mini puris

Pani puri and Bhel puri are famous chat items n kids will love it and it can be prepared at home also. Im in baku, where i dont have any indian chat corners and here in indian shops i wont get such puris instantly, so i made this puris at home and i store it for many days. here i just want to share this recipe with all.


Ingrediants

¾ cup Fine rawa

½ cup Maida

2tsp Urad dhal flour

¼ tsp Salt

2 pinch baking powder

ice cold water for mixing dough

oil for deep frying

Instructions

Dry roast urad dhal till golden brown in colour. Cool it and ground to fine powder.

Mix maida, rawa and urad flour with salt and baking powder.

Add water and knead to a stiff dough.

Keep closed under a wet cloth for 20 min

Knead well again till smooth and elastic.

Divide the dough and roll out in to big chappathis in medium thickness.

Use a round biscuit cutter and cut small rounds , Deep fry in hot oil. Put one by one and press well to puff up and fry till crisp and golden brown.

We can store it in air tight container.



Recipe Marathon # 2- 6th day -Ghee Roast and Mixed Vegetable Sambar

6th day of Recipe Maraton by Dk I want to share todays breakfast with all so here is the simple recipe of Dosa and Sambar.
Ghee roast is a favourite dish for all of us and i add curd in the dosa batter to get this perfect finish. here todays breakfast for all :)

Ingrediants
2 cup Raw rice
1 cup idli rice
1 cup urad dhal
salt to taste
a pinch of soda
2 tbsp Sour curd
oil/ghee for frying
Instructions
Soak rice and dhal to gether fo r 5 hours.
Grind to smooth paste with enough water.
Allow to ferment over nite.
Next day mix curd, soda and dilute the dough if necessary with water.
Heat tawa and pour laddle full of dough in the centre.
Spread in circular motion towards the outer edge.
Add a tsp of oil and ghee.
Serve hot with sambar and chutney.

Mixed Vegetable Sambar
This simple Mixed vegetable sambar is easy to make and very tasty to have with dosas & Idli. I love to try lot of varieties in Sambar.

Ingredients
1 cup Mixed vegetables (potato, carrot, broad beans, butter beans, pumpkin, brinjal,drumsticks …..)
1 ½ cup Tamarind extract (thick)
1 cup Toor dhal
1no Onion (chopped)
1no Tomato
2no Green chilli
1tsp Turmeric powder
3tsp Sambar powder
salt to taste
Seasonings
¼ cup Small onions (finely chopped)
1tsp Mustard seeds
1tsp Urad dhal
5no Red chilli
10 no Curry leaves
Instructions
Take a pressure cooker Wash toordhal and add onion, tomato,greenchilli, vegetables and turmeric powder.
Add enough water and pressure cook toordhal with vegetables.
Take a kadai and add 4tsp of oil, splutter mustard seeds, urad dhal, curryleaves, add small onions and red chilli. Fry well til the onion turns dark brown.
Add sambar powder and tamarind extract. Boil till the raw smell goes and add toordhal mixture. Boil in sim.
Garnish with cut coriander . Serve hot with Dosa or idli.

Recipe Marathon # 2 - 5th day - Spicy Brinjal Kootu

5th day in Recipe Marathon todays special is Brinjal kootu.....its Different.....have a look.....

Brinjal is my favourite vegetable....i used to make lot of dishes with it...this is a little bit new dish which i learnt it from my friend..here the brinjal is marinated and then fried and cooked in tamarind extract....really it was tasty....

Ingrediants 1
200g Brinjals
2tsp Red chilli powder
1tsp Jeera powder
1tsp pepper powder
1tsp Ani seed powder
1tsp Corriander powder
½ cup Tamarind extract (medium thick)
Salt to taste
Ingrediants 2
2tsp mustard seeds
2tsp jeera seed
(dry roast in a pan and make fine powder)
Seasonings
Mustard seeds and curry leaves
Instructions
Cut brinjal lengthwise and Mix all the given spices with salt and make a paste.
Marinate brinjal in it for 15 min
Deep fry the brinjal and keep aside.
Heat 4 tsp oil in a pan and add mustard seeds, curry leaves, now add brinjal.
Sprinkle water on it, add tamarind extract and add the dry roasted powder. Check for salt.
Fry well till oil leaves the mass . Serve hot as a side dish for Bisibelebath or rasam.

Recipe Marathon # 4th day - Aappam

4th day of Recipe Marathon by DK, Todays Special is Aappam. Aappam is a famous break fast variety of Chettinad. I learnt this Aappam from My mom in law. Atleast once in a week we will prepare this at home for break fast. Easy breakfast recipe here. Check it out.
 
Ingrediants
2 cup Raw rice
1 cup Par boiled rice
½ cup urad dhal
3 ½ tsp Rock salt
2tsp sugar
1cup Coconut extract ( Medium thick)
½ tsp Cooking soda
oil for frying

Instructions
Soak dhal and rice together for 5 hours or overnite
Grind to a smooth thick paste. Add salt in the end of grinding.
Ferment it. Extract coconut milk from one large coconut.
Pour it in the prepared batter and add sugar. Mix it well
Heat a deep curved pan (appam kadai) and wipe it with a cloth dipped in oil.
Pour a ladle full of batter in the center of the kadai . lift it and tilt it in circular motion. So that the appam is formed.

Center of the appam should be thicker
Close the kadai with a lid and cook it in medium flame
Appam is cooked only in one side
When the batter is cooked, remove the aappam carefully with the other side of the dosa laddle.

Serve it hot with, vadai curry, vattal appam (egg pudding), thengai paal, spicy gravy.
If eyes are not formed in the dosa add little more cooking soda. Keep aappam kadai specially for making aappam.

Bajra and Rice flour Puttu

Puttu is a nice recipe i have ever seen. it is rich and healthy recipe too. For the challenge event by Veda Murthy I made this recipe specially. i used bajra flour with rice flour. I hope i dint cross her conditions. it tasted differently. I have to thank my friend Nadia for helping me out with this recipe.



Ingrediants
¾ cup rice flour
¼ cup bajra flour
1 cup water with salt
2tbsp coconut (grated)
Instructions

Mix both the flour well and Sprikle water little by little and mix the flour so that the salt gets mixed well.
Sprinkle water and mix well till it becomes bread crumbs consistency and stiff.
Take puttu maker and first add 3tsp coconut and 3 tbsp puttu mavvu (mixed flour). fill it as three layers. in the puttu maker. (coconut first and flour next)
Keep water in the bottem vessal of puttu maker and steam the puttu till the steam comes out thro the lid.
Remove the puttu and serve hot with Kadal curry or Green gram curry(veg). Non veg side dish is chicken gravy.

Thengai Chorru/ Thengai paal rice

Thengai paal rice in other words kuska rice/ thengai choru.......it is a traditional dish prepared always during occasions....i love the taste of basmathi rice cooked in coconut milk.....

Ingrediants
1 cup  Basmathi rice
1no     Tomato
1no     Onion (Cut lengthwise)
1no     Carrot (cut as thin circles)
3tsp    Ginger garlic paste
2 no     Green chilli
1tsp    Garam masala
1 cup  Coconut extract
1 cup  Diluted curd
2 cup  Water
8no     curry leaves
Hand full  corriander leaves
ghee and oil for frying.
salt to taste.
Instructions 
Wash and soak rice for 10 min. Fry rice in a pan with little ghee and fry till moisture absorbed.
Heat a oil/ghee heavy bottem pan . Add onions and garam masala, fry well. Add tomato, carrots, garam masala and ginger garlic paste. curry leaves and corriander, fry in high flame. Add  2 cups of water, coconut milk and curd, salt... when it comes to boil add the rice and cook in medium flame.
Dum it well.
serve hot withVeg or chicken  kurma

Recipe Marathon # 3rd day - Dal Makkani

Today is the 3rd day of Recipe Marathon by DK todays special is my favourite side dish. Every day different kinds of recipe. U can call it as RAGAMALIKA too.....:)...
Dal makkani is my favourite dish. i used to have this when i go to resturants. why cant i try myself some how got this recipe and tried it out last saturday for dinner. it turned out yummy and this is protein rich also, cos i added rajma to it, really filling side dish. There r many kind of dal makkani preparation...this is my way
Ingredients
1cup Black gram dhal
¼ cup rajma (soaked over nite and pressure cooked)
2 no tomatoes (make puree)
1no onion (chopped finely)
2tsp ginger and garlic paste
1 tbsp butter
2tsp cream
2tsp Chat masala
3tsp red chilli powder
1tsp dhania powder
1tsp turmeric powder
Salt to taste
Instructions
Boil the dhal with water. Seperately.
Heat little butter in a pan and add ginger and garlic paste and fry onions.Add all spice powders. Add the ½ cooked dhal and add tomatoe puree ,salt. When the mixture boils add the rajma. Atlast add the butter cook in slow flame for sometime.
Add cream on top and serve hot with parathas or chappathi.

Recipe Marathon # 2nd day - Vermecelli Kheer / payasam


Today is the second day of Recipe Marathon # 2 hosted by DK today i like giving a sweet dessert to all.... Hope u all will like it.

Vemecelli kheer /payasam is a traditional recipe. Using cinnamon and cardomen in this recipe will give a good new taste... this is my version of preparing this recipe....in all my kheer recipe i use condensed milk for a rich milky taste...

Ingrediants
1 ½ cup Vermecelli
1 cup Sugar
Ghee for frying
1 tbsp Cashewnut , Kismis.
1 tsp Cardomen powder
3 cup Thick Milk
1 tbsp Milk maid
1 inch Cinnamon (small piece)
2 no Cardomen
a pinch saffron (dip it in 1 tbsp warm milk)
Instructions
Apply ghee to coat vermicelli pieces with hands. Roast it in a deep curved pan till it changes to golden brown colour evenly.
Fry cashew and kismis in little ghee and keep aside.
Heat 2 tsp oil in a deep curved pan splutter cinnamon and cardomen and add little water , boil well and add vermicelli , milk. Add saffron.
Cook vermicelli in milk till soft.
Add sugar and stir completely dissolved in reduced flame.
Atlast add condensed milk to enrich the taste of the kheer.
Remove from fire and mix fried cahew and kismis along with cardomen powder.
Serve hot or cold.
