Kathirikkai Kotsu / Brinjal Kotsu

   Brinjal Kotsu is one of my favorite side dish,and its very tasty also. I used to prepare this instead of usual sambar.This takes less time also to prepare, no need of dhal so it is an easy preparation, with the available ingredients at home. Feeling happy to share one of my favorite dish with u all..
   


Ingredients
Brinjal (cut lengthwise) ½ cup
Onion (slice lengthwise) ½ cup
Mustard seeds 1tsp
Fenugreek seeds ½ tsp
Asafetida powder ½ tsp
Greenchilli 2 no (cut lengthwise)
Red chilli 2no
Turmeric powder ½  tsp
Kuzhambu chilli powder 1tsp
Tamarind juice (thick)½ cup
Jaggery (powder) ½ tsp
Curry leaves few
Salt to taste
Method
Add oil in a pan, Splutter mustard seeds , fenugreek seeds, red chilli, green chilli and curry leaves. Add onion sauté till pink colour.

Now add brinjal,little salt. Sauté till tender.
Now mix kuzhambu powder fry well. Add tamarind juice/ little water. Boil well. Last add little jaggery. Allow to boil in sim for 2 min. Serve hot with rice upma/dosa/idli/pongal.

Akkaravadisal

Today Day 7 # Blogger Marathon by Srivalli. So Planned to end the marathon with a sweet. here we go.....Akkaravadisal is a traditional dish. It is prepared in special occasions like marriage or festivals. My mother is an expert in making such dishes. I like jaggery very much and the blend of jaggery , milk , rice and moong dhal, tastes yummmm…..here is an iyengar’s special Akkaravadisal….

Ingredients
Rice 1cup
Moong dhal 1/4cup
Milk 7cup
Jaggery  1 ¼ cup
Ghee 1 cup
Cashew nuts few
Kismis few
Cardomen powder 2 tsp
Method
In a heavy bottom pan, take rice, dhal and milk. Keep in low flame and start cooking. Stir occasionally. It will surely takes long time to cook rice and dhal in sim.
When the rice and dhal is cooked well. Add jaggery to it. Mix well. Add cardomen powder .Keep in sim for another 10 min. Then in a separate pan, heat ghee and fry cashew nut and kismis.

Add to it. Serve hot or cold. I love it in anyform.

Vanilla / Butter cookies (eggless)

I tried priya's Eggless almond cookies day before ,but i dint prepare it with wheat flour.I tried out with Maida / All purpose flour but with the same proportion, and i made butter cookies with vannila essence also and both vanished immediately. Some how i made it...ya hooo!!!! I just want to share this recipe bcos this is my first try of baking after my school days. Thanks a lot priya for this recipe.
so here we go.
Ingredients
1cup Maida
½ cup sugar
¼ tsp salt
1tsp vanilla essence
½ cup butter
Milk as reqired
Method

Pre heat the oven to 180 degree Celsius. Mix the flour, sugar, salt, your  fingers in a bowl. Add the butter essence and milk to the flour mixture to make soft dough. Divide the dough and make them into balls and flat each balls.Place balls over a baking sheet leaving some space between each cookies.Bake the cookies for about 20 minutes or until cookies are lightly golden brown. Allow the cookies to cool down for 2 - 3 minutes before taking them from the sheet. Enjoy with tea. we had it just like that....:)

Sundal Biriyani

Happy Women's Day !!! Today Day 6 # Blogger Marathon by Srivalli. Sundal biriyani is my moms recipe. This in other words we can call it as protein biriyani. Channa, peanut and peas (pattani). I used to have all the three in readymade here. Kids will love this dish with some papad, My daughter will give pukka comment for all my recipes. She loved to have more of this rice. So this dish was success for me...:)...try this out and enjoy the protein rich biriyani....

Ingredients
PREPARING RICE
Basmati rice- 1cup
Garam masala 1 tsp
Lemon juice 1tbsp
PREPARING SUNDAL
Channa (kondai kadalai in tamil) Hand full
Peanut Hand full
Peas Hand full
Potato 1 no (cut in medium size)
Masala
Onion 1 cup (finely chopped)
Clove -2no
Cardomen -3no
Cinnamon – ½ inch
Ginger garlic paste – 1tbsp
Green chili – 2no (slit it long)
Turmeric powder-1tsp
Red chili powder – 2tsp
Pudina leaves (few)
Brinji leaf – 1 no (small)
Coriander leaves (for garnishing)
Salt to taste
Method
Preparing rice
Half cook rice separately by adding lemon juice, garam masala and salt. Keep aside
Preparing sundal
Soak channa, peanut and peas together for 5-6 hours and pressure cook it with potato  by adding salt. Keep aside.

Masala
Heat oil/ghee in a pan. Splutter  clove, cinnamon, cardomen, add onion /green chilli ,sauté well till it turns to brown colour now add turmeric powder, red chilli powder, ginger, garlic paste and salt. Add the sundals to it. Mix well and keep in sim for 10 min.
After adding sundal
Transfer the sundal masala to rice cooker. Now in the same pan add little ghee , put brinji leaf and pudina together and fry till u get rich aroma. Add it on top of the masala. Now add the rice and sprinkle little water on top, close the rice cooker. Cook for 15 min. Open the cooker and mix well. Serve hot with raita, papad/ pickle. Enjoy.

Rice Upma

Today Day 5 # Blogger Marathon by Srivalli. Rice upma 's taste differ from other upma's, This taste is unique and i love it . At last i made my hubby to have upma, he dont like upma varieties .Usually my mom used to prepare this for evening tiffin. She used to prepare this dish in Vengala Pathiram , (Copper vessel ), that also makes a difference in taste i believe. Wonderful combination for this upma is kotsu. Generally, i used to have it with sugar, curd and even mango pickle. This is considered as traditional and authentic dish in my home.  
Ingredients
Grind
Raw rice 1cup
Toor dhal hand full
Few whole pepper (according to taste)
Few whole jeera (according to taste)
Seasoning
Mustard seeds 1tsp
Chana  dhal 1tsp
Urad dhal 1tsp
Green chilli (minced) 1tsp
Ginger (finely chopped) 1 tsp
Whole red chilli 2no
Asafoetida 1 tsp
Oil for seasoning
ghee 1tsp
Salt to taste
Method :
Grind the rice, toordhal like rawa.
Heat a heavy bottom kadai. Add oil for seasoning, Add mustard seeds, channa dhal, urad dhal,red chilli, green chilli, ginger ,salt and asafetida. After u get a nice aroma. 
 Add water. For 1 cup rice – 4 cup water.Allow the mixture to boil well. Then add the rice and dhal mixture. Stir well. Leave it for 30 min  in sim. Occasionally mix well. Then switch off, add ghee and mix well. Serve hot with onion / kathirikai kotsu.

Paneer pulao

Today Day 4 # Blogger Marathon by Srivalli. Paneer pulao is a favorite recipe of mine.. I'm a very big fan of paneer and want to try out many recipe out of it. I was having a plan of preparing it after i came to saudi, and it happened yesterday and my daughter was pestering me side by side for the cooked paneer... even she is a big fan of paneer. I cooked paneer with tomato puree & chilly paste and it was yummy and tasty.


Ingredients:
1 cup   basmati rice
1/2 cup peas (optional)
1  onion finely chopped
2 tbsp  ginger, garlic, chopped
4no Green chili (grind in to paste)
3 tbsp  Tomato puree
1 cup   paneer cubes
3 tbsp   curd
1/2 tsp  garam masala
2 tbsp chopped coriander
a pinch  sugar
1 tsp  butter
1 tsp   oil
salt to taste
Method :
Wash the rice and soak in water for some time.

Heat the butter and oil in a pan , add the onion, ginger, garlic and green chilli paste and stir for a few minutes till the onion becomes brown .
 Then add the tomato puree and paneer cubes and cook for some time.

Finally, add the rice,  garam masala, coriander, curd,2 cups of water , salt and close the pan and cook till the rice is done.  Serve hot.
